how to

  1. Chop walnuts into preferred sized chunks.
  2. In a bowl cream the butter, mascarpone, brown sugar and eggs.
  3. Mix in the flour, baking soda and salt until just combined.
  4. Mash the bananas with a fork. There should still be some small chunks left.
  5. Mix the bananas and walnuts into the cake until everything is distributed evenly. Don't over mix.
  6. Pour everything into a buttered cake or bread mould.
  7. Bake for 55 minutes at 175°C. A skewer inserted into the middle should come out clean.
  8. Transfer onto a cooling rack and wait at least 15 minutes before cutting.
