how to
- Shred finely the carrots.
- Mix all of the dry ingredients in a bowl.
- In a separate bowl cream together eggs, sugar and vanilla.
- Whisk in the oil to the eggs and sugar batter.
- Mix in the carrots and the dry ingredients. Don't overmix.
- Bake for 50 minutes at 175°C. A skewer inserted into the middle should come out clean.
