how to

  1. Shred finely the carrots.
  2. Mix all of the dry ingredients in a bowl.
  3. In a separate bowl cream together eggs, sugar and vanilla.
  4. Whisk in the oil to the eggs and sugar batter.
  5. Mix in the carrots and the dry ingredients. Don't overmix.
  6. Bake for 50 minutes at 175°C. A skewer inserted into the middle should come out clean.
