how to

  1. Mix all of the dry ingredients in a bowl.
  2. In a separate bowl cream together eggs, sugar and vanilla.
  3. Whisk in the oil to the eggs and sugar batter.
  4. Add in the dry ingredients to the batter and minimally mix.
  5. Mash the bananas with a fork. There should still be some small chunks left.
  6. Mix the bananas into the rest of the batter.
  7. Transfer to a buttered cake mould.
  8. Bake for 50 minutes at 180°C. A skewer inserted into the middle should come out clean.

white chocolate whipped cream made in advance

  1. Add the chocolate and cream into a small sauce pan and heat up until just combined.
  2. Let cool down to refrigerator temperature.
  3. Whip up when the cake is ready to be decorated.
